No, an internship you do after your master's results are declared in Ireland will not count toward your course completion.
Only internships that are an integrated or mandatory part of your master's program, approved and assessed by the university, are recognized as fulfilling academic requirements. Internships done independently after all academic requirements are finished do not contribute to your degree.
If you want an internship to count, choose a program with a formal internship component.
